The base of a Thai red curry paste is traditionally made with a mortar and pestle, and remains moist throughout the preparation process.

The red colouring derived from dry red chillies and the completed dish retains wonderfully aromatic and fragrant notes.

The main ingredients include (dried) red chilli pepper, garlic, shallots, galangal, shrimp paste, kaffa lime peel, coriander and lemongrass to name but a few.
