Unlike some other curries which are popular across the UK and Europe, such as Korma and Tikka Massala, this dish has a base, being both sweet, sour and slightly spicy in flavour.
This is very different to the Korma and Tikka Masala dishes, which are usual extremely creamy in order to give them their mild flavour, which in turn can lead to them being rather heavy and packed full of calories (although it is definitely worth it).
The flavour of our Pathia comes from a mixture of traditionally used Gujarati curry spices, combined with Jaggery, which is a type of cane sugar, and lime juice blend.
The heat in the dish is created by the use of green chilli peppers and dried red chilli peppers, which combined together certainly give is a bit of a kick!
The sauce itself is very versatile, so can be cooked with chicken, lamb, prawns or vegetables and still retain all of its unique flavours.
