A madras curry is a strong, spicy yet flavoursome paste, originating from the spice-growing region of Kerala in southern India, has coriander, cumin, and red chillies. Ideal for use with red meat.

If you find this paste a little too hot for your liking just add a few spoonfuls of yogurt until your taste buds can cope and enjoy the experience this wonderful hot, sweet and sour curry gives you.
